Valentine’s Day is this weekend and I wanted to do something a little different this year. Instead of buying chocolates or ordering my husband’s favorite cupcakes from GiGi’s bakery, I decided to put my wifey skills to the test and bake something of my own. Some may call it beginners luck, but to be completely honest I can’t believe how well they turned out and were super easy to make. The recipe requires very little ingredients and can be made with tons of different fillings. Keep scrolling if you want to see how I made these cute little things.

You’ll need the following: Pillsbury Pie Crusts (comes with two, already rolled out flat), Flour, 2 eggs, White Sugar, Cinnamon (optional), Cookie/Lollipop sticks (make sure they’re oven safe), Pie filling or other filling of your choice, Heart shaped cookie cutters.What you need

Start by sprinkling a handful of flour on a clean flat surface and begin rolling out your dough.Step 1

Next use your cookie cutter to cut out as many hearts as you can. You can also take the left over pieces of dough and combine it together to create a few more. Step 2

Place your hearts on a cookie sheet, making sure to leave a little space between each one.Step 3

Now the fun part of adding in the fillings! I went with classic cherry pie filling and my personal favorite caramel apple. You could add just about anything from peanut butter, nutella/chocolate, or other fruit fillings.Step 4

Next you’re going to add the sticks, and gently press down so they stick to the dough. Make sure you put it about ยผ of the way in the pie so they don’t fall off!Step 5

In a small bowl wisk 1 whole egg together to create your egg wash. On the top half of your heart (the half without the filling) take your finger or a brush and line the edge of the heart with egg wash, this will help seal the pie together. Now place it on top of your other half with the filling.Step 6

After you’ve evenly lined up the two pieces of hearts, take a fork and gently press along the edges of the dough to seal them together.Step 7

Next brush each pie with a little bit of egg wash and sprinkle sugar and/or cinnamon on top. Then pop them in the oven for about 15- 20 minutes, or until golden brown. Step 8

Once they’re done, let them cool for about 5-10 minutes and then decorate with cute ribbon or string for a little something extra! You could even add a little tag with a cute saying for your Valentine. Step 9

Mini Omelets

With school about to start and me always running late, I was trying to think of a quick & easy breakfast that I could reheat and eat throughout the week. After raiding the refrigerator I came up with these mini breakfast omelets. They’re super easy to make and the fun part is deciding what fillings you want to add. I just used fresh spinach, deli ham &ย red onions.ย You could also use sausage, bell peppers, tomatoes, cheese or whatever you like!

What you’ll need:
cupcakeย pan
cupcake liners or PAM cooking spray
a dozen eggs

For the filling:
handful of fresh spinach
4 pieces of deli ham
ยผ ย cup of chopped red onion
1 tsp of minced garlic
salt & pepper for seasoning

 

Start by preheating the oven to 375 degrees, take your cupcake pan and add 2 cupcake liners to each cup. You’ll need 2 liners so the egg doesn’t soak through. Then in a large bowl add your eggs, salt & pepper and whisk, whisk, whisk! Slowly add your eggs to each cup about ยพ of the way full, make sure to leave room for the filling! Next add your fillings in a skillet over medium heat and let sit for about 5 min, or until the onions and spinach get soft. Lastly add your filling into each cup and bake for about 20-25min, check about halfway through to make sure they don’t burn!Once they’re done and have cooled you can put them in a large plastic bag and refrigerate them until you’re ready to reheat. ๐Ÿ™‚

 

 

Southern Potato Salad

Ingredients:

1 lb red potatoes, ย ยผ cup chopped bacon, ย ยผ cup chopped chives, ย ยพ cup mayo, ย 1 tablespoon minced garlic , ย 2 tablespoons vinegar, ย 2 tablespoons dijon mustard,ย salt & pepper


Directions:

  • Cut potatoes in quarters and boil on medium-high heat for about 25-30min.
  • While potatoes are boiling, cook bacon until crispy just how you normally would any method will do.
  • Chop bacon, and chives thenย set aside.
  • Once the potatoes are done boiling, put them in the refrigerator to cool.
  • While potatoes are cooling, mix the mayo, dijon mustard, vinegar, and minced garlic in a small bowl.
  • Add this mixture plus salt & pepper to the potatoesย & stir gently (be careful not to stir too hard or you’ll end up with mashed potatoes), then put back into fridge for about 10min. or until cool/cold.
  • Remove from the refrigerator one last time and add your chopped chives &ย bacon on top, then serve it up & enjoy!

Homemade Chicken Pot Pie

Chicken Pot Pies These cute little homemade pot pies are probably one of my favorite things to  make. Feel free to change or substitute any ingredients, this is just my favorite way to make them. Here’s what you need:

– 1 can of Pilsbury Biscuts (I used the Homestyle Butter Tastin’)
– 2 chicken breasts
– ยผ can of corn
– ยผ can of peas
– ยฝ cup of chopped carrots
– 1 can of Campbell’s cream of chicken soup
– ยผ cup of shredded cheese
– Pam or any Non-stick spray

 

Directions:

  • Start by pre-heating your oven to 350 degrees, and then begin to cook your chicken on the stove top in a large skillet. Season with salt and pepper then chop into small pieces and set aside.
  • To make the filling, in a large bowl add in the can of Campbell’s cream of chicken soup, cooked chicken, ยผ  can of corn, ยผ  can of peas, and ยฝ cup of chopped carrots and stir together.
  • Next get a large muffin/cupcake pan and spray lightly with Pam. Set 1 biscuit inside each muffin cup/tin and spread it out around the edges as best you can (Don’t thin the biscuit out too much or they will burn & not cook evenly).
  • Add in the filling until each biscuit is full to the top (Don’t over-fill or it will be a big ol’ mess). Don’t worry about the biscuit covering the top of the filling, it will bake over in the oven.
  • Then pop those little pot pies in the oven for about 10-13min. or until golden brown. You’ll want to cook these a few minutes less than what the biscuit directions say.
  • Once they’re done, sprinkle the tops with shredded cheese as soon as you take them out of the oven and enjoy!
